ktichen and restaurant grease on sanitation pipes

I have no idea if this is relevant to Bloomingdale's flooding situation, but the Washington Post recently did this story about the effect of kitchen and restaurant grease on sanitation pipes. Warning, it's kinda gross.

My problem with the story was how restaurants sell off their oil (maybe grease) for biofuel was not mentioned.
