Curating a standout wine list with interesting finds like orange wine wasn’t enough for The Red Hen Sommelier Sebastian Zutant. So, he teamed up withVirginia Wine Works’ Ben Jordan to create a wine the restaurant could call its very own. The rosé style wine is au naturel in style, meaning it's low on sulfurwithout additivesunfined and unfiltered. The first batch of Sebastian’s wine, dubbed “Dalia,” was bottled on Jan. 29 and it debuted on the wine list on March 3. Get a glance at the label; it was designed by one of the restaurant’s servers. Up next for Sebastian is the production of a rosé cider.
