A wonderful summer salad - potatoes and green beans -- that I have been making
here in Provence for decades and just discovered that José Andrés
mother used to make it for him in Barcelona.
He simmers fingerling potatoes in salted water for 8 minutes and then adds the green beans another 5 minutes, drains them and pours over oil garlic oil. Separately, lightly brown garlic cloves in olive oil over medium to low heat, with 1/2 tsp of pimento and salt. Toss the vegetables with the oil, drizzle with sherry vinegar and serve.
This
is almost exactly the same way I make this dish except I have always cooked the
potatoes and green beans separately. I am trying his method Saturday for
lunch. You can vary the potatoes and the beans - use green or yellow or
flat romano. The flat romanos will take longer but cook them until
tender. I have been getting both the skinny French Haricots Verts and the
thicker ones that look like ours.
SHENANDOAH SEASONAL: Tomatoes! The summer crops
are in: 6 varieties of eggplant, beans, cabbage (green and purple), radicchio,
beets (red and golden), squash mix, rainbow chard, Kale (curly and Dino), pea
shoots, cukes, kohlrabi (green and purple), onios, scallions, dandelion greens,
baby gem lettuce, sage, Italian flat leafed parsley, onions and
scallions. Organic.

heirloom, cherry, early girl, green beans, kales bunches - red, green,
Tuscano, sorrel. red, white and yellow new potatoes, yellow,
golden and green squash, pale green Ishtar, eggplant (black, striped,
barbarella, white, Large Italian, long Japanese neon. beets, fennel,
round, Savoy, Napa cabbage, green and purple and sweet banana
peppers. Fresno, poblanos, jalapenos. sweet candy onion, radishes, Swiss
chard, collard greens, cukes, lettuces - romaine and salonova
heads. Elephant Garlic, Parsley. Rosemary. Chives. Lavender. Mint.
Basil, Cilantro. Dill. Stoneground Grits and Stoneground Cornmeal. Squash blossoms, Basil.
