LEEKS!
In Provence, my neighbors think of onions as a
vegetable and stuff them; they use leeks as an aromatic and chop them and dice
them and saute them as a base the way we use onions. I was excited to see
that Mountain View has French leeks -- they are young and slender and full of
flavor. They look like overgrown scallions or green onions and you can
bake, grill, saute, frizzle, stir fry or boil them. And once you do, you will
see that leeks are better than onions, more complex and sweeter.
- So, saute leeks instead of onions
- Grill Leeks instead of grilling spring onions
- Leek and Fennel soup
- Leek loves to be paired with fennel and fish and tomatoes
- Roasted or Grilled Leeks with toasted walnuts or this version
- Vibrant Tasty Green Beans with Leeks
- Middle Eastern Leeks with yogurt, dill and sumac
- Make a simple pasta with caramelized leeks and lemon zest (with or without scallops)
- Classic Leek Vinaigrette
Speaking
of Alliums, did you know that Mountain View has shallots?
Shallots tend to be sweeter and have a more complex flavor than onions.
But what to do with shallots? If you like South East Asian foods, you use
them in Thai
seasoning pastes, as a
crispy fried or oven
roasted garnish for noodles or you pickle them as a condiment. Thai
salads abound in julienned raw shallots. In French cooking, they are the
star of
vinaigrettes and classic sauces like beurre
blanc (or
here) , marchand
de vin, bearnaise,.
Use them for Peanut
Noodles with fried shallots and seared Tempeh. Slice them over
tomatoes. Make
Green beans with crispy shallots.

Besides Leeks, shallots and Tomatoes, Shawna will have new potatoes,
leeks, fennel, fresh garlic, chives, spring onions, summer crisp lettuce, kale,
beets, chard, summer squash, basil, mint and herbs.

Visions of sugarplums danced in their heads because they saw the Methely plums this week. There are red and black raspberries, sweet cherries, sour cherries, red and black currants, gooseberries, plums, yellow peaches and Lodi apples.

They will not forget the yogurt this week! Ricotta, quark, fetas, soft brie like cheeses (the Frosty Morning was a hit at a dinner party last weekend), Camembert, Vermeer, Wallaby, Dragonsbreath, Cheddar, Caverly, Tommes, Bovre and many others.

CUCINA AL VOLO:
Their homemade pastas are flash frozen so they stay
fresh. Just pop them in your freezer so you can always put a resto
quality dinner on the table within 15 minutes. What could be lighter than
fresh pasta and sauteed vegetables or their Pesto or Eggplant Norma
sauce. Make that pasta with caramelized leeks and lemon zest.
GARNER'S PRODUCE:
LOTS of heirloom tomatoes this week, lots of cherry
tomatoes. WATERMELONS. Cantaloupes. Bicolor sweetcorn, peppers in green, yellow
and purple. Cucumbers. Many varieties of eggplants. Green and yellow beans.
Red, white and yellow spuds. Squash and zucchini. Green tomatoes, sweet
potatoes, sweet candy onions, Kale, swiss chard, carrots, collard greens, hot
pepper, Basil bunches.
Have you tried the Crispy Kosher Pickle Spear? They
are a half sour pickle with fresh dill, crushed garlic and red chili
flakes. The Italian Giardiniera is back this week after its debut for
Sweet Green's Salami and Spicy Pickled Veg salad. It is a vinegar and oil
pickle made with nine different vegetables. Kraut is the Stinking Rye
made with caraway seeds and juniper berries. They have reserve barrels of
some krauts that are now currently at market but you can order them from the online store You can order the Clean Kraut, Turmerine,
Garlic Dill, Rosetido and Ramp krauts from the online store for pickup at the
market
PANORAMA:
