Hi BFM Fans,
This weekend is Strawberry Heaven. Sample the strawberries from Virginia, Maryland and Pennsylvania so that you can taste how varieties and different soils change the flavor of these luscious berries,
SMOKE AND PICKLES SEASON has arrived. As Top Chef alum Edward Lee says in his wonderful book of Southern Cooking with Asian flavors:
"Where there is smoke, there is always a pickle nearby...because nothing cuts the intensity of smokiness like a sharp pickle. Together they are harmonious, the perfect yin and yang. If I had my way, every dish would start with smoke and pickles--everything else is just a garnish."
What to do with Number 1 Son's Kimchi? AT THE STANDS:
WHISKED: Strawberry rhubarb pie is a market favorite so Jenna is baking it again this week. Sea Salt Chocolate Chess Pie is a cross between a brownie and a flourless cake, Strawberry lemon Chess Pie is swirled with Jenna's own strawberry compote. The savories: Bacon, Cheddar, Onion Quiche. Kale, roasted Garlic, Cheese Quiche.
KESWICK: Of course you need yogurt with all the strawberries. I buy two quarts a week and it is the best in the region. (Sample it yourself in those cute little cups at the far right of the stand. Saute some greens and stir some yogurt in at the end. It makes the perfect sauce. This is like your Mother's yogurt if she's from India, the Middle East or Eastern Europe. Really. The three new mixed milk cheeses are Keswick's version of mozzarella, camembert and Valancay cheeses. Melt some Vermeer, cheddar or Dragon's Breath on your grilled goodies. TIP: Saute some greens and stir a few dollops of yogurt in at the end -perfect sauce for greens.
PANORAMA: croissants, three sorts of baguettes, scones, breakfast pastries, sour doughs, whole wheats, French style rye and pumpernickel raisin. Rustiques. Olive oil rolls, brioche buns.. ciabatta rolls. sandwich breads and boules. Challlah makes good French toast.
TRUCK PATCH FARMS: LOTS of beautiful Earliglow and Chandler Maryland Strawberries at the tables this week. Which do you prefer? Lettuce, spring mix, baby arugula, kale, Swiss chard, red beets, asparagus
TRUCK PATCH MEATS: lots of sausages for the grill and to go with those interesting krauts and pickles: Andouille, smoke, Applewurst, Country, Ground, Italian, Maple, Sage. Bacons. All cuts of pork -- shoulder roast, shoulder chops, ribs, loins, steaks. Chicken. Turkey and Turkey burgers (white or dark meat).
GARNER: Asparagus. Strawberries. Sugar Snap Peas. Zucchini. Chard. Lettuce. White turnips. Kale. October beans (also known as Borlotti beans if you venture over to Italy-- I am cooking a pot of them right now). Arugula. Bok Choi, Beets, Spinach, Radishes, Sweet Persian style cukes. Mint. Basil. Dill.
IVY BRAND: Certified Organic. Snap Peas to toss with Chives, white and purple spring onions. Young collards, frilly mustard greens, Kales. Bok Choi. Radishes, Cilantro. Spectacular head lettuce and mixed salad greens. Make lettuce wraps or composed salads with those head lettuces. Cute little baby zukes and yellow squash (they love cilantro and mint!)
REID: Fill your gardens with their herbs. This is a good week to plant after all the rain and cool temperature. Apples, too and fingers crossed for their PA strawberries.
