Subject: BFM: Say: Cheese!
Hi BFM fans
Remember we are always open
rain or shine.
CHEESE IS BACK! YAY. HURRAH.
ABOUT TIME.
Mark K. will be back at the market
with their new name-- which they were just starting to use last year: SWIRLY GIRL CREAMERY (named after one of
their goats). Here are a few to look forward to on Sunday.
- Morbier: this semi soft cow cheese with a layer of
vegetable ash is a shout out to one of my favorite French cheeses.
- Winter Morning is their most popular, a bloomy
rind cheese
- Feta, Tomato Basil Bovre and Farmhouse cow cheeses are
all great with pasta -- or on crackers.
- You like Funky cheese, they have Mooster, Firetruck and
Cowttin. Mooster is soft and spreadable and melts well. Firetruck is
a salty, hard, grater, Cowttin is similar to a triple cream.
The longer you keep it, the funkier it gets. Very French.
NEW PRODUCER: Shenandoah Seasonal has joined the market: You
can order online here or shop at their stand in the
market.
Number 1 Sons fabulous ferments are no
longer by pre-order only but it helps them a lot if you do pre order. They
will be staffed by Haley at the stand on Sunday with their most popular
pickles, ferments and kimchi in prepacks.
GROFF's CONTENT: Beef, pork and chicken this week at the stand this week...

Did you meet our wonderful new producers: Ali and Dan Haney of SHENANDOAH SEASONAL. Ali writes:
Fresh baby greens! Lettuce mix, arugula, Pea shoots, baby kale. Three kinds of beets this week: Red globe beets have traditional earthy beet taste. Chioggia (candy stripe) are beautiful when sliced thin on a mandolin and eaten fresh. They have a sweeter flavor. Gold beets are the sweetest and have been known to convert those who don’t think they like beets into beet lovers! Never let those beet greens go to waste. We sauté them in butter.

This week we are eating pasta
primaveras with summer squash, caramalized onion, peas from Reid’s and fresh
pasta from Cucina Al Volo.
Limited supply of long English
cucumbers. Robin says: The real ones that have some shape to them -- no
plastic skin. Why do they always have plastic skin in the supermarket?
DYK they were chosen by Shawna and Attila to replace Mountain View at the market? (Attila and Shawna and the kids were supposed to be traveling the world right now but their departure has been delayed by the virus) Ali and Dan have been farming for 9 years - before that they were social workers.... in Cambodia. REID is berry berry good. Look for the strawberries,
blueberries. sugar snap peas, English Garden peas.
Zucchini. Last of the storage apples and pears The apples and pears have
been in controlled atmosphere storage to keep them crisp and fresh. Fruit
butters, no sugar applesauce and canned peaches, honey. Apple Cider in 1/2
gallon sealed growlers. If you have not had canned peaches since you were
a kid, try them
Herb plants because it is not too late to plant them. And new cilantro plants should be replanted every few weeks. That is what they do in Mexico. Let the older plants go to flower and seed. Save the seeds -- they are coriander seeds. A few houseplants too.
CUCINA AL VOLO: Good pasta weather Sunday. Matteo and Rolando make the pastas and sauces and eggplant parm and lasagna for both their three restos and the markets. IF there is a specialty you want to see at market, tell them! All these homemade pastas love to wait for you in your freezer but cook up from frozen to place in less than 5 minutes (okay, the lasagna takes longer). I keep at least three different pasta in my freezer at all time -- two ravioli and something else. Remember the green kale fusilli makes the best pasta salad. The spirals catch all the bits of vegetable and cheese and chopped herbs.
