CUCINA AL VOLO: Good pasta weather Sunday. Matteo
and Rolando make the pastas and sauces and eggplant parm and lasagna
for both their three restos and the markets. IF there is a specialty you
want to see at market, tell them! All these homemade pastas love to wait for
you in your freezer but cook up from frozen to place in less
than 5 minutes (okay, the lasagna takes longer). I keep at least
three different pasta in my freezer at all time -- two ravioli and something
else. Remember the green kale fusilli makes the best pasta salad.
The spirals catch all the bits of vegetable and cheese and chopped herbs.
Does your Dad crave lasagne or eggplant parm?
