Reminder:
This year the season ends DECEMBER 19th.  We will take off November 28th for Thanksgiving Weekend but be back December 5, 12 and 19th.

  • Reid now grows about 120 different kinds of apples throughout the season and as they ripen, they bring them to us, week by week. So, the selection varies - some apples varieties have already disappeared for the season but others will pop up
  • Tell Damien if you want a bag of bread cubes for stuffing for Thanksgiving.

SWIRLY GIRL CREAMERY:  Come check out this spread of cow and goat milk and mixed milk cheeses. KING MUSHROOMS: Grill or roast these mushrooms:  Oyster, King Trumpet, shiitake, portobello, chestnut and maitake this week. Also, tinctures, my favorite Hungarian Mushroom soup ....and marinated mushrooms.    The soup is chock full of mushrooms and wonderful with a piece of Damien's new Campagrain bread, toasted.

One of our guests is making a Mushroom Wellington as part of our Thanksgiving Feast.  You can guess where they are getting the mushrooms!
 

GROFF'S CONTENT: Have you tried the new Ham? Chicken and Duck eggs.  Pork and beef and 11 pork sausages and lots and lots of lamb.  Pork shoulder, chops, bacon, pork jowls.Lamb ideas:  Julie's special Leg of Lamb cut for two, Leg steaks for grilling, shoulder roasts, shoulder chops are great in a crockpot.  Have you tried the Denver Ribs -- Lamb spare ribs.  The whole range of steaks and tons of ground beef. Turkey Lasagne and Turkey Pot Pie, Shepherd's Pie, Meatballs in Marinara, Bone Broths, Pork Liver Pate. Ham and White Bean soup.

PANORAMA: Damien's seasonal fruit tarts. Croissants, almond croissants, pain au chocolat, chocolate plie, 5 different muffins, cinnamon buns, 4 kinds of Danish, Kouign Amann, sticky buns, Palmier (Elephant Ears), Pumpkin Viennoiserie, Apple Turnover. Guess what the Germans call Palmier or Elephant Ears?  They call them Pig's Ears!  Learned at market today from a German customer.
 

GARNER'S PRODUCE:  

Green  and yellow beans, red, white and yellow spuds, sweet potatoes, turnips, Okra. Scallions.  Grits, cornmeal, sauces, Honey Nut squash. Tomatillos.  Potatoes. The white sweet potatoes are like a sweeter version of an Idaho baking potato.  Broccoli. Cauliflower, Fractal Romanesca. Huge Napa cabbages that make at least 3 meals. Chiles. Bell peppers.

So many greens sweetened  by the frosts: tat soi, bok choy, kale, collards, turnip, mustard. Romaine, salad, lettuce, stir fry, arugula, escarole, field cress, sorrel, stir fry mix, lettuce blend, parsley, cilantro, 

 

Fall squash include Butternut, Acorn, Spaghetti, Kabocha, Delicata, Honey Nut. Japanese Futsu, Carnival, Neck Pumpkins and many others, heirlooms and unusual as well as the ones you know.  Red, White, orange and Japanese Sweet Potatoes, Ornamental Broom Corn.

CUCINA AL VOLO:  No one doubts that Fall is Pasta Season, right? Home made Tuscan pasta makes for incredibly good fast food as it should be. Boil the water, salt it, drop in the pasta and they are done 2-4 minutes later.  Grab a sauce and you can have dinner on the table in less than 10 minutes.  And this is resto quality pasta, made in the same kitchens as their well reviewed restaurants. I always keep some pasta in the freezer for quick, excellent meals.

Tip: Pumpkin ravioli would be great at Tday, especially for Vegetarian guests. Get some this week and freeze them.
