A NEW IDEA FOR ALL THOSE ZUKES

Do you have a glut of zucchini? I served this velvety chilled soup  for lunch:  Zucchini, avocado, onions, garlic, basil, water. Topped with a dollup of yogurt.  It is essentially this recipe but I use water not stock and here is the most important tip: Grate the zukes and salt them in the pot, cook them until they release their water. Don't add the water until then to concentrate the flavor.  Check the fb page for a picture.

Blueberries, blackberries, white peaches, yellow peaches, donut peaches, white nectarines, plums, Earligold, Pristine and Zestar apples, watermelons and Gala melon and cantaloupes.
The Storage and Care of Peaches
by Kathy Reid who knows all about them

Peach season is one of the best times of the year (in my opinion). But, they have a small window of time when they are perfectly ripe and ready to enjoy, so here are a few tips from thekitchn.com, to make sure that they don't go to waste.

If the peaches aren't quite ripe yet:
Keep them on the counter, ideally unwashed and stem side down in a single layer. If you are in a hurry, you can put them in a paper bag, and to speed up the process even more, put a banana in the bag with them.

If they are ripe:
Eat them. ;)  But if you aren't ready to eat them yet, you can store them in the refrigerator for a few days to slow down the process.

But how do you know if they are ripe?
Give them a *gentle* squeeze (Please don't bruise the whole crate at the stand...), they should be firm but give a bit.
Smell them- If they smell good, they taste good
Check the color- Peaches should have a dark yellow color

Freezing peaches:
Freezing peaches is easy!  Just peel them, slice them into wedges and put them on a cookie sheet in the freezer. Once they are frozen, you can put them into bags or other storage containers and they will keep for months.
