Hi BFM Fans,

While you are planning your Halloween parties, you might want to consider this upside down French apple specialty: A Tarte Tatin.  It is the best and prettiest rustic dessert you can make in prime apple season with lots of buttery apple chunks, caramel and a choice of crusts-- a single crust draped on top SO IT CANNOT GET SOGGY. http://www.nytimes.com/2014/10/22/dining/a-foolproof-tarte-tatin-recipe-from-gotham-bar-and-grill.html  Another rustic treat is this one pot bean/pea-kale-sausage bit of comfort food that is Southern or Portuguese (Caldo Verde comes close)   http://www.seriouseats.com/2014/10/black-eyed-peas-kale-andouille-sausage-stew-one-pot.html.  Another favorite recipe for this time of year are spinach/bacon or pepper tartines. Open faced toasts have taken over San Francisco but the French have been doing that as Tartines for decades  (centuries?).  David Tanis has 2 lovely versions of these  open faced grilled cheese slices topped with vegetables.  http://www.nytimes.com/2014/10/08/dining/grilled-cheese-try-a-tartine-recipe-instead.html  Bake 2 trays of them in the oven for another party idea...  We have plenty of spinach, bacon and red peppers at market.

COOKING DEMO at 11:

Marcella is back sharing her love of food and art.  She was checking out the stands last week to decide what she would make for us on Sunday.  And she alway illustrates the recipe original.  (Her complete collection of food-related prints, and a few final copies of her independently published book, Comida Latina: an Illustrated Cookbook, will be available.)

MUSIC At 10

Take Halloween Back for Apples!

Every year I buy a box of kid-sized apples to give out at Halloween and only1 kid has turned me down in years, especially after I tell them that these apples are sweetier and juicier than any candy they get. (The Moms are always thrilled).  Why give out bags of lousy candy when you can give out baby apples.  You can always dip them in caramel if you feel they have to  be candied, right?
Ask Connor for a half bushel price.

How to Carve any photograph into a Halloween Pumpkin
I loved the idea of this -- http://www.seriouseats.com/2013/10/how-to-carve-any-photograph-into-a-pumpkin.html
  • Get Your Pumpkins for Halloween
  • Red Cabbage and Kale kraut with a touch of bay -- spooky good at Number 1 Sons.
  • Kohlrabi -- the alien vegetable is so good!
  • Freshly dried Cranberry Beans and Black eyed Peas at Garner
  • Pumpkin Chocolate Pie to get you into the Halloween mood at Whisked
  • Eggplant, pepper, summer squash sale at Garner-- Fill a bag/$10
  • Baby Ginger, Fresh Turmeric and duck eggs at Keswick
  • Sale on Thanksgiving Turkey - $4.29/pound for pre Nov 1 orders at Truck Patch
  • Brownies on Sale at Panorama -- this week's weekly sale.
  • 20 different apple varieties at the Orchards this week..sample them all.
  • Kohlrabi this week

TIP:
Kohlrabi in German is related to the words for cabbage and turnip and for good reason.  They are chameleons:  grated raw they make the best slaw; chopped and sauteed in butter, they taste like young turnips.  Add sauteed onions and then water and puree and you have cabbage potato soup without either cabbage or potatoes.  Good roasted in chunks too.  Ivy Brand made them the secret ingredient in lettuce tacos 2 weeks ago.

REID:
Apples (Honeycrisp, Gala, Macoun, Gold Supreme, Fuji, Yataka, Pinova, Jonathan, Haralson, Jonagold, Empire, Smokehouse, Red Delicious, Snow Sweet, Ambrosia, Calville blanc, Orleans, Stayman, Nittany ), Asian Pears, Barlett Pears, Seckel Pears, Concord grapes, Cider (Apple, Apple Cherry, Apple Grape, Honeycrisp)

IVY BRAND: Certified organic.  No freeze yet at their farm by the Bay, and they are looking good through the 10 day forecast.  This weekend  carrots, beets, radishes, turnips, spinach, arugula, baby lettuce, spicy spring mix, head lettuce, boc choy, cabbage, broccoli, swiss chard, kale, collards, parsley, cilantro, dill, scallions, onions, garlic, potatoes, sweet potatoes, winter squash, sweet peppers, hot peppers, and eggplant.

TIP: Check our fb page for Keith and Megan's gorgeous cabbage rolls.  I grew up on cabbage rolls -- we ate them all winter and I love varying them.  Carnivorous, vegetarian, Eastern European, Middle Eastern, tomato based, lemon and olive oil syrupy -- slowly braised cabbage rolls will take any stuffing and any seasoning and make them delicious.  The cabbage soften in a low, slow braise on the stove or in the often and sweeten. I like to add some heat to offset the sweet cabbage.   http://facebook.com/BloomingdaleFarmersMarket

KESWICK: Not just great cheese but also real baby ginger (no brown peel, no stick in your teeth fiber, aromatic and perfect for : stir fries, ginger tea, ginger chicken, ginger syrup, ginger beer.  The young turmeric is a revelation if you think of turmeric as that dry yellow powder in Indian curries.  Duck eggs are few but so rich in flavor.  And the cheeses: pure Jersey cow and mixed milk goat and Jersey.  15-20 choices every week.  Grilled Kimcheese with Pano bread, Vermeer (or Dragonsbreath) and a slather of Number 1 Sons kimchi has become my go-to grilled cheese sandwich.  The tomatoes at Garner and Ivy Brand still crave feta cheese.  A craft beer with a Tomme that has been rind washed weekly in Troeg is a great match.  Apples, pears and cheese are classic snacks.  Need a cheese plate for a dinner:  Frosty Morning, a Valancay, a classic Lesher and a new wave Morbier are all interesting choices.

TRUCK PATCH:
Gorgeous fronds of Dino(Tuscan) Kale. Broccoli, Cauliflower.   Arugula, Mesclun, Spinach,  Swiss Chard, Beets, Green Peppers, and Eggplant. Green . Acorn, Buttercup, Butternut and Red Kabocha Squash, Herbs.

TRUCK PATCH MEATS:
Bacon, Bacon, and more bacon thin and thick cut! Sage sausage, maple sausage, Hot Italian, Sweet Italian, smoked country, kielbasa , bratwurst, ground pork, bone in pork chops, boneless and bone in butt. Hammocks, fat back, pork liver, ham steaks, and pig feet. Whole free range chickens, boneless chicken breast, chicken thighs, chicken drumsticks, and chicken wings. Reserve your Thanksgiving Turkey.

GARNER: Broccoli. Tomatoes: “ordinary reds’, romas, beefsteak, “early girls and heirlooms-- and cherry toms. Newly dried Cranberry beans or Black eyed peas cook up quickly and make a good salad with roasted anything.  Good with Kale and sausage too.  Japanese, white, Italian and Thai eggplant; Squash: . Yellow. Zucchini, Ishtar, that pale green Lebanese variety, , golden zucchini. Last 2 weeks of  Sweet Corn.  (I find the flavor very corn-y this time of year.) okra, potatoes, rainbow of peppers sweet and hot, green and yellow and Roma beans.  Swiss chard and arugula.  Mint, dill and parsley. Red, White Yellow Yukon Potatoes.  Lots of Greens.

PANORAMA: They have a great sale every week  This week it will be their Brownies.  And have you tried the Parisian Macarons? Gorgeous jewel colors -- box them and bring them to a dinner.  Lots of rolls and buns. French bread baked by French bakers – baguettes, croissants, palmiers, Danish, scones, Breton specialties.  The Kouign Amann wowed people 2 weeks ago.  (Ask for a sample from Adriana).Whole wheat, rye, pumpernickel, rustiques, country, sour dough – boules and sandwich breads too.

TIP: Challah makes the best French toast.

NUMBER 1 SONS: The newest cucumbers  have been especially crisp and tasty. The half sours are great.  YiWah has createed a slightly sweetened take on bread and butter pickles: Sweet Slices are made with with Potomac Vegetable Farm’s crisp and sweet red pepper slices for hearty fall sandwhiches. If you’re interested in a purple cabbage holiday kraut stop by and tell then..

WHISKED:   Jenna says: Our featured pie this week is a pumpkin chocolate pie. I was never really sold on the combo of pumpkin and chocolate until I tried it, but the bittersweet flavor of the chocolate, squashy pumpkin, and pumpkin pie spices (cinnamon, nutmeg, allspice, and cloves), really hit it out of the park. Also Classic Pumpkin Pie, Salted Caramel Apple Pie, Bacony Onion Quiche and Mushroom, Rosemary and Roasted Garlic Quiche
