Hi BFM fans

Embrace the summer heat and cook with all these wonderful summer foods this 4 July weekend.

New or Notable:

  • Szechuan BBQ sauce is addictive on everything you grill-- at the "Dumplings" stand
  • Corn is back
  • Stock up on Pickles and Kimchi and Kraut for your spreads
  • Don't forget the basil and cilantro and parsley to make green sauces
  • 3 Bean salad, anyone?   -- Jumbo Italian flat beans (Romanos) at Shenandoah and Green and Wax at Garner and Reid
  • Yes, Kimchi is really good on tomato salad.
  • First Yellow and White Peaches at Reid
  • Sweet Cherries and Pie Cherries at Reid
  • Strawberries, blueberries, red raspberries and gooseberries at Reid
  • Best Pasta Salad starts with Green Fusilli from Cucina Al Volo
  • Cherry Pies at Whisked
  • Keep planting those herbs from Reid, Garner and Shenandoah.

CHEESE IS BACK!

Ask Mark K. which are his favorite cheeses for your barbecues.  I love Grilled Kimcheese sandwiches, for instance and they have good melters.  (Now called Swirly Girl Creamery)

  • Morbier: this semi soft cow cheese with a layer of vegetable ash is a shout out to one of my favorite French cheeses.
  • Winter Morning is their most popular, a bloomy rind cheese
  • Feta, Tomato Basil Bovre and Farmhouse cow cheeses are all great with pasta -- or on crackers.
  • You like Funky cheese, they have Mooster, Firetruck and Cowttin.  Mooster is soft and spreadable and melts well. Firetruck is a salty, hard, grater, Cowttin is similar to a triple cream.  The longer you keep it, the funkier it gets.  Very French.

PANORAMA: breads, croissants and baked goods as always.

REID is berry cherry  good.  Look for the strawberries , blueberries. gooseberries, last week of sugar snap peas. Last week of English Garden peas.   Zucchini. Last of the storage apples and pears The apples and (last week for) pears have been in controlled atmosphere storage to keep them crisp and fresh. Fruit butters, no sugar applesauce and canned peaches, honey. Apple Cider in 1/2 gallon sealed growlers.  PEACHES PEACHES PEACHES.

More than 30 different Herb plants because it is not too late to plant them.  3 different basils, 3 diferent oreganos, 3 kinds of chives, 5 kinds of mintsAnd new cilantro plants should be replanted every few weeks.  That is what they do in Mexico.  Let the older plants go to flower and seed. Save the seeds -- they are coriander seeds.

CUCINA AL VOLO: Good pasta weather Sunday. Matteo and Rolando make the pastas and sauces and eggplant parm and lasagna for both their three restos and the markets.  IF there is a specialty you want to see at market, tell them! All these homemade pastas love to wait for you in your freezer but cook up from frozen to place in less than 5 minutes  (okay, the lasagna takes longer).  I keep at least three different pasta in my freezer at all time -- two ravioli and something else.   Remember the green kale fusilli makes the best pasta salad.  The spirals catch all the bits of vegetable and cheese and chopped herbs.

Here is this week's list:

  • Burrata ravioli
  • Spinach and ricotta ravioli
  • Beef brisket and Parmesan ravioli
  • Roasted butternut squash and mascarpone ravioli
  • Egg fettuccine
  • Smoked paprika pappardelle

  • Squid ink chitarra
